I have the following information that might come close to the request
regarding "Away in a manger."

As far as I know there is no German Weihnachtslied (at least not a
traditional one) that uses the melody line of the American carol, although,
as we all know, such things travel quite readily these days.

However, there is a German Christmas carol that is very much in the
tradition of Protestantism in its more emotional/affective variants as we
certainly find them in German Barock of which Bach is, of course, one key
representative in his oratorios, cantatas and myriads of original
compositions or adaptations of existing hymnic material. I am referring to
"O Jesulein zart".

As regards the melody, I have one book that indicates "17. Jahrhundert",
another that actually ascribes "Johann Sebastian Bach."  Obviously the two
do not necessarily stand in contradiction to each other.

As for the text,  I have it in two slightly variant forms:

Version 1:

O Jesulein zart, dein Kripplein ist hart.
O Jesulein zart, wie liegst du so hart!
Schlaf, Kind, schlaf, tu die Aeuglein zu,
schlaf und gib usn die ewige Ruh!
O Jesulein zart, dein Kripplein ist hart!

Schlaf, Jesulein, wohl,
nichts hindern soll;
Ochs, Esel und Schaf sind alle im Schlaf.
Schlaf, Kind, schlaf. Tu die Aeuglein zu,
schlaf und gib uns die ewige Ruh!
Schlaf, Jesulein, wohl, nichts hindern soll.

Die Seraphim sing'n und Cherubim kling'n;
viel Engel im Stall, die wiegen dich all.
Schlaf, Kind, schlaf. Tu die Aeuglein zu,
schlaf und gib uns die ewige Ruh!
Viel Engel im Stall, die wiegen dich all.

Version 2:

O Jesulein zart, das Kripplein ist hart.
        OR:  O Jesulein zart, wie liegst Du so hart.
Ach schlaf, ach tu die Aeugelein zu,
schlaf und gib uns die ewige Ruh
O Jesulein zart, wie liegst Du so hart.
        OR (for the last line):  O Jesulein zart, das Kripplein ist hart.

Schlaf, Jesulein, wohl.
Nichts hindern soll:
Ochs, Esel und Schaf
sein alle entschlaf'.
Schlaf, Kind, schlaf, du Dein Aeugelein zu
schlaf und gib uns die ewige Ruh.
Ochs, Esel und Schaf sein alle entschlaf'.

Die Seraphin [sic] singt
und Cherubin [sic] klingt,
viel Engel im Stall
die wiegen Dich all.
Schlaf Kind, schlaf, tu die Aeugelein zu,
schlaf und gib uns die ewige Ruh.
Die Seraphin singt und Cherubin klingt.

Seid stille, ihr Wind,
lasst schlafen das Kind.
All Brausen sei fern,
es ruhen will gern.
